Brewing Notes, American Wheat (Thursday 16apr2009)

Brewed an american style wheat beer today.  Recipe was as follows:

6.0 lbs. NB Wheat LME (65% Wheat, 35% Barley)
  .5 lbs. Light DME
  .4 lbs. Table Sugar
 1.0 oz. Willamette Hops, 4.8% AA (60 min)
 1.0 oz. Cascade Hops, 7.8% AA (15 min)
 
 Pitched one 11.5 gram packet of Safale K-97 Wheat/Alt dry yeast, rehydrated and attemperated.  Pitched into 69F wort.  I haven't used this yeast before, but I've read that it is a fairly clean and heat tolerant strain, two things that will work well for this brew as my temp control is non existant, and it stays above 75F in the house at this point.  I've used Wyeast 1010 before and was very happy with the results, this is the closest I could find with dry since I'm trying to mainly use dry now for convenience.

OG came out at 1.049.  I added a little extra DME and some table sugar to boost up the gravity a little and thin the beer out a little for a nice crisp beer for hot ass FL afternoons.

Bottling Notes, Carolina Mild (Sunday 13apr209)

Ended up with ~ fifty 12 oz. bottles worth of mild.  I used 3.5 tbsp of corn sugar going for about 1.2 volumes of CO2 in the end.

Final measurements on this beer are:

OG: 1.033

FG: 1.012

% attenuation: 63%

% ABV: ~ 2.8

Cals/12 oz : 111

Nice roasted taste to this beer.
